As we are getting into the fall season I’m getting more excited about all the warm and seasonal food we get to have again. I love fall and all the ingredients that come with it, but here are some classic recipes that I think almost everyone needs to try to get into the “fall mood”.
I love zucchini bread, it tastes so good and you get your serving of vegetables (kind of). I know that this might not be a typical fall food, like pumpkin pie, but I really love this recipe and I love good bread! Plus it lasts a long time and is great for a snack or a quick breakfast on the go. I have a go-to recipe that my sister shares with me and it always seems to turn out lovely:
1 cup oil
2 cups sugar
2 cups zucchini, grated
2 tsp vanilla
1 tsp salt
1/4 tsp baking powder
1 tsp.baking soda
3 tsp cinnamon
3 cups of flour
1 cup nuts (optional)
Heat oven at 325F. Beat eggs until foamy, add oil, sugar, zucchini, and vanilla and mix well. Sift together the dry ingredients and add. Stir well; pour into 2 greased and floured loaf pans. Bake for 1 hour.
Pumpkin Cookies with Cream Cheese Frosting
This was a new recipe that I found and I love it! I really like pumpkin cookies but adding the cream cheese made it heaven for me (I’m a cream cheese addict). This was taken from Gimme Some Oven baking blog and I really liked it. It was easy to understand and bake and I had most of the ingredients so it made my shopping easier.
One thing that I did experience with the cookies is that they came out kind of dry. My mother tried them when I pulled the first batch out and she said they needed the frosting because they were so dry. So I was so worried that I did something wrong because in the recipe she said how she loved how light and fluffy they were. After I frosted them and left them in a container overnight and they became moister and then had that fluffiness that pumpkins cookies have. I was so excited and couldn’t stop eating them! We decided that these cookies will become a new fall staple in our house during the fall season.
I love cobbler! It’s simple and tastes so good! I love the crumble and all that good stuff, YUM! This is a great warm dish when the weather is getting a bit chillier and you want something sweet to keep you warm. Plus with the great peach-ie taste gives you that fall feel with the fall colors. Next is apple pie! Who doesn’t love a good apple pie?! I’m excited to try out one of these decorative pie tops for Thanksgiving. My favorite kind of apple pie is when it has cinnamon in the recipe, I think that really adds to the taste of the pie.
Streusel Coffee Cake
Last, be not least is coffee cake! I know this isn’t an obvious fall treat but I love it because it’s not too strong of a taste so you can have it with hot cocoa, tea, or obviously coffee. This particular recipe isn’t the one I was hoping to find but I do like it because it doesn’t have a strong taste. When I baked it the batter turned out to be kind of in between a dough and a cake batter consistency which was kind of interesting but I still enjoyed it. This website is a little confusing because you have to click on another link to find the information for the topping, which I didn’t do, so as I was pouring it into the pan I realized that and I just made up a topping last minute that was pretty similar to theirs. They had a pecan kind of topping but instead of pecans, I used brown sugar. I’m not a big fan of nuts so I think I would have liked this more anyway.
